Whole Wheat Banana Pancakes

4 cups Prairie Gold whole wheat flour
2 teaspoons salt
4 teaspoons baking powder
2 teaspoons baking soda
2 teaspoons cinnamon
2 tablespoons ground flax(optional)
4 cups sour milk or buttermilk
1/2 cup olive oil
1-2 ripe bananas, mashed
4 eggs

Mix all ingredients and fry on griddle until golden brown.
Makes 12-14 plate-sized pancakes.

If you do not have buttermilk, put one tablespoon of white vinegar per cup of milk.
Mix and let sit for 5 minutes.  This is a buttermilk substitute.
